This part of the Chicken works well and adds nutrients to the broth when added to the stock pot with our own "Chicken Necks and Backs" these are a part of the carcass that can be viewed as too much bone and not enough of meat to make for a good for eating experience, but don't despair they can play a very important part in adding flavor and nutrition to soups and making stock, simmering over low heat for 24 hours.
Our chickens are raised out on pasture with opportunity to scratch and peck. In addition to grasses, seeds, nuts, and insects, they receive a corn and soy-free grain supplement. The birds are a heritage breed which means this chicken tastes unlike any you’ve had before.
