Made up of dense, lean meat, the beef heart is a muscle that can be cubed into stew meat or sliced into steaks. The heart has a concentrated beef flavor and is full of nutrients such as zinc, iron, and vitamin b12.
This heart comes whole and must be trimmed before it can be cooked. Thaw, then remove all the fat and gristle before cutting the heart into your preferred pieces.
Because the muscle is so lean, heart either needs to be cooked very hot and fast or braised low and slow. We like to sear it like a steak or cook it as part of kabobs on the grill. It’s also a great addition to a beef stew to add extra flavor and nutrients.
Each package of Nature’s View beef heart weighs a pound and a half and will feed four to six people.
