This raw cheddar cheese is aged for approximately 2-4 months and is the youngest of all the cheddar cheeses we offer. As the name implies, it’s bite is mild and it’s creamier than its aged counterparts. The perfect cheese to melt or to pair with grapes and candied nuts. This cheese is a favorite with the kids in our family.
All of the Alpine Heritage cheeses we offer are made with raw A2A2 Jersey milk. The cows are antibiotic free and are 100% grass fed, and the resulting milk is as nutritious as it is delicious. Raw milk from cows with the A2A2 protein does not contain A1 beta-casein proteins which are typically associated with lactose intolerance and gut inflammation. Most commercial dairies have cows with a mix of A1 and A2 cows, but the milk used in this Alpine Heritage Creamery cheese is lab tested and 100% A2.
