This raw cheddar has been aged for approximately 4-8 months and smoked over apple wood giving the cheese a robust, sweet, and slightly smokey flavor. This cheese is ideal for pairing with cured meets or melted over a grilled burger.
All of the Alpine Heritage cheeses we offer are made with raw A2A2 Jersey milk. The cows are antibiotic free and are 100% grass fed, and the resulting milk is as nutritious as it is delicious. Raw milk from cows with the A2A2 protein does not contain A1 beta-casein proteins which are typically associated with lactose intolerance and gut inflammation. Most commercial dairies have cows with a mix of A1 and A2 cows, but the milk used in this Alpine Heritage Creamery cheese is lab tested and 100% A2.
